Tomato Soup with Egg

Today’s recipe that I’m going to share with you is one of my favorite soups, which is tomato soup.

But for me, it is not a normal soup to make, but it is also not complex, but one thing I promise you, that it is very tasty.

I always wanted my kids to be soup fans and especially with good, fresh ingredients. A good homemade soup is always more beneficial, as we know what ingredients we are putting in every dish we make. I love to privilege the healthiest and I know they are good for our health!

Tomato soup is low in calories and high in potassium and vitamins C, K, and A. Also, it is a great way to take advantage of the antioxidant capacity of tomatoes. So let's go to the steps to make this wonderful tomato soup.

- First, remove the tomato branch and then cut them in half

- Then put the garlic

- Put the salt and the oregano on top of the tomato and finally drizzle the tomatoes and garlic with olive oil

- Put in the oven for 20m at 220ºc

- After removing the tray, remove the garlic and set it aside.

- Now is the time to put the red onion and red pepper (if you want, add salt and more oil, over the onion and pepper)

- Go to the oven for 10m at 220ºc

- After removing the tomatoes, onions and peppers and put them in a pan

- Also insert the peeled garlic and then the parsley

- It's time to add the beaten egg and then the vegetable broth

- Stir very well and wait until it boils. Here you can add more salt and oil to your liking (if you wish)

- Then grate until everything is well wrapped and ready to be served
