Banana Pancakes

This weekend I decided to make a tasty and so simple recipe for the family. Who loves bananas? Well, most of the people, and you can do so many recipes with this delicious fruit. Here, we are huge banana fans around this house, and when I make some new recipe with it, everybody loves it. But I will be honest, in the beginning, my kids were a little bit in doubt to taste the banana pancakes because I made them a little bit different, as you can see in the video below. But in the end, they were amazed by the flavor of the pancakes.

A banana and a pancake are not very likely friends. In fact, when they're tried together, they'll probably never see each other again. So how did this plant-based food duo become such fast friends? Bananas are a respected fruit worldwide, as we know. Pancakes are the most popular breakfast item in most countries worldwide, with many restaurants dedicating an entire menu to them! These two dishes seem like polar opposites, but somehow they have found their way into one another's arms and have been inseparable ever since.

Bananas are rich in vitamins such as Vitamin C and Potassium. Both of these essential vitamins are extremely important for the human body to stay healthy and active. Bananas are also often used as a base ingredient in many desserts such as ice cream, cakes, and puddings.

Pancakes are simply a delicious meal with a soft texture and a flaky crust. They can be consumed as lunch or dinner, served with syrup or fruit toppings! Another favorite type of pancake is the crepe.

What kind of bananas can I use in this recipe?

The Banana Pancake is delicious and healthy as the main snack dish or for breakfast. In this recipe, two bananas are used, but you could, of course, use more depending on your taste buds. The banana is a pretty mellow fruit when it comes to flavor, so it will work well with different pancakes.

In this recipe, the best banana to use is the ones that are already brown outside, because the flavour it will be more intense.

Once you are in the crepe-making process, you'll realize that it's not as simple as you thought it would be. There are numerous ways to make pancakes. For example, some people say mixing the dry and wet ingredients together separately is the best way to make pancakes. However, this recipe uses only one bowl and incorporates the wet ingredients into the dry ones to create a liquidized batter.

How can I make a healthier pancake?

There are numerous ways to make a healthier pancake! For instance, you could try using whole wheat flour instead of regular flour. You can also replace some of the butter or vegetable oil with applesauce or some other liquid. Another great way to make your pancakes healthier is to substitute bananas for apple sauce.

However, don't get rid of the banana if you try to remove excess sugar from your diet. Bananas have natural sugars and potassium, which is an essential vitamin that helps lower blood pressure.


Perfect Healthy Snack

The Banana Pancake is an excellent option for breakfast or as a snack. It's also quick and straightforward to make, so you can eat it on the go!

Pancakes are a traditional breakfast dish eaten all over the world. For many families on a tight budget, this might be their only hot meal of the day, so it's essential to provide something nutritious yet affordable for them to eat. With bananas being one of the most common ingredients in an American household, mixing banana pancake batter is just as easy as using eggs and milk (and we're betting you have those around somewhere).

How to do this recipe

Let's start with this delicious recipe and so easy to make. 

First, cut the bananas. You can cut them in thicker slices, as I did, for example, or thinner, but that depends on what you like best.

After, in one bowl, let's start to put the ingredients of the pancake. 

First, you put the flour (I used wheat flour), but you can use the one that you like most. After I add stevia, baking powder, egg, and finally the Coconut Milk. Mix well everything.

The next step is to slice the banana in the mix and then piece by piece in a pan with coconut oil (some add butter in the pan, but I prefer coconut oil). When it starts to become gold the pancakes, you can take them out and be ready to serve. So tasty!!!

  • 2 bananas

  • wheat flour (100 gr)

  • stevia (30 gr)

  • baking powder (1 teaspoon)

  • 1 egg

  • coconut milk (125 ml)
