Delicious Meatballs

Today's recipe it's delicious meatballs, and most of the kids love it!

They are chicken meatballs.

Here in the house, we love Meatballs, especially the kids put on the top of the list! My kids don't resist the way they are made because I do the meatballs in the oven, and after they are cooked, I put them in the sauce (that is prepared aside), and I left them to be more involved in the sauce. I usually like to do medium meatballs, and when I made them, I want to do them with onion, garlic, and basil. As is a habit here in the house, we don't use too much salt, and since the sauce has salt, the meatballs don't have. I really love to prepare this dish for my family, because they really enjoy it!

You can use any kind of meat, but my personal favorite is chicken or turkey. I know that red meat can stay more tender and juicy, but I use a trick with chicken or turkey meat because I cooked them in the oven and mix them with egg and breadcrumbs. They stay delicious!

I made them with 2 slices of brown bread (big ones) and blended them for the breadcrumbs. 

Let's start to share how to do this great recipe.

First, you put the meat in a pyrex and add the lemon juice, onion, garlic, basil and mix everything very well. After you add the egg and immediately the breadcrumbs. Involve again very well!

After everything is very well involved, start making meatballs, preferably medium, and line the board to the oven and start putting the meatballs. My daughter wanted to help me with this process, and she did a great job!

After they are all ready, take them to the oven at 220ºc, for 20 to 25m (depending on the oven's power).

During the time it takes for meatballs to start, start making the sauce.

In a frying pan or pan, add oil and insert the tomato pulp, coconut milk (coconut milk, I always use milk with 0 sugar), and regular T45 flour. Stir well at medium temperature.

If the flour starts to create balls, I recommend taking it to the blender, as I did, so that the sauce is really quite creamy and consistent.

Continue to stir well and insert the paprika, nutmeg, and pepper. Keep going until everything is very well involved—lower the temperature.

When removing the meatballs from the oven, start putting them one by one in the pan and wrap them in the sauce, leaving the temperature low so that the meatball adapts to the sauce.

Then you can start serving!

In our case, I served it with rice for my son and me and my daughter preferred the pasta! But it can be served with mashed potatoes, salad, couscous, quinoa, whatever you really like!

  • 600 grs of chicken

  • 1 lemon juice

  • Half of a medium onion

  • 2 cloves of garlic

  • 1 bunch of basil

  • 1 egg

  • 4 tps of breadcrumbs

  • 200 ml of tomato sauce

  • 200 ml of coconut milk

  • 1 well sull tbs of flour (well full)

  • 1 teaspoon of paprika

  • 1 teaspoon of nutmeg

  • 1 coffee spoon of black pepper
