Shrimp Rice with Turmeric & Coconut Milk
I love to cook this dish to my family. The kids are all the time asking me to do this dish over and over!
So today’s recipe I will share with you this simple recipe and really delicious, I should say!

So, let’s start to cook:
First, I put olive oil on the pan, normally I put 4 to 5 tsp, depends the quantity that you like. For me it’s enough the quantity mentioned. After, I put 3 cloves of garlic. Stir a little and then put the shrimp (already washed and thawed) and stir well until it is well wrapped in olive oil with garlic.
Afterwards, insert the lemon juice and stir again. As I said in the first recipe, I am a lemon lover and in almost all recipes the lemon will be present.
Then add a little bit of ginger, paprika and turmeric (a little more than the other 2 mentioned). Mix well.
Right after that, put the 1 cup of coconut milk, stir well and add a little bit of salt (adjust at your on taste). Stir well and let it cook, on low heat, for 5 minutes.
Then, put 1 cup of rice (full) and stir well. Then, put 1 cup of coconut milk again and stir well.
Let it cook until the rice is ready.
I use Basmati rice and sometimes I add 1 more glass with coconut milk, as it depends on the rice you use. There is rice that absorbs more quickly than others.
Afterwards, the shrimp rice is ready to be served.

olive olive oil (4 / 5 tsp)
3 cloves of garlic
600 grs of Shrimp
lemon juice of half lemon
ginger (1 coffee spoon)
paprika (1 coffee spoon)
turmeric (1 tea spoon)
1 cup of rice
2 / 3 cups of Coconut Milk
