Chicken with Couscous

Around here, we love white meat, especially chicken. We can do a thousand recipes with chicken, and all are delicious. 

I love to share healthy recipes with you because first, I wanted to do this for so long, and second I love to cook healthy meals and teach my kids to eat well and try a lot of flavors. 

My daughter loves to be involved in the kitchen with me, and she's very curious to know what I'm putting, ingredient by ingredient, in the new recipe. And what gives me more joy is when they are eating, they look at me and say: "Mommy, it's so delicious!" That makes my day!

I will cook today's recipe in the oven, and I love dishes to be made in the oven. I do! 

With this recipe, I choose to put it together with couscous, but not the normal ones. I decided to put it together with couscous pearl. They are more prominent, and the kids prefer.

Couscous Pearls, also known as Israeli couscous, are small balls of toasted semolina flour. In Israel, they are called Ptitim. ... Like rice, couscous pearls will absorb the flavors of whatever spices or sauce you are using. Using pearl couscous, quick and easy main dishes and salads are just minutes away.

How to prepare:

First, you grab a large pyrex and start to put the chicken breasts, and after, put the cherry tomatoes. On top of the chicken breasts, put the lemon juice and then insert the chopped garlic and drizzle with olive oil. Then add the dried onion, the ginger, the sweet pepper, and finally the Italian herbs.

Put salt to your liking and drizzle some more with olive oil.

Please take it to the oven with a temperature of 220ºc for 25m. Always check that the chicken is well cooked, but do not let it dry. I advise you always to check, as it depends from oven to oven.

After cooking, chop the chicken or sear it in small pieces and mix well with the tomato sauce. Then, insert the couscous and stir well so that everything is well involved.

And it is ready to be served! It's delicious! Enjoy your food!

- 2 large chicken breasts

- 500g of cherry tomatoes

- half a lemon juice

- 2 garlic cloves

- 1 tsp of dried onion

- 1 tsp of ginger

- 1 tsp sweet pepper

- 1 tsp of Italian herbs

- salt
